Go to   Dashboard > WooCommerce > Settings > Payments> Coinbase 

Click Manage

Set the Order Status When Payment Done, which could be the following, according to you use case

1. Pending Payment: pending
2. Failed: failed
3. Processing: processing
4. On Hold: on-hold
5. Completed: completed
6. Cancelled: cancelled
7. Refunded: refunded
8. Draft: draft (if used, though not a standard status like the others)
